Favorite Desserts For Diabetic Husbands

It’s easier than you think to create delicious desserts for your diabetic husband. When I had to get right down to it the ideas came flying at me out of my kitchen cupboard!

Here’s a few of his favorites:

Easy Orange/Banana Parfait

1 pkge Lite Orange Jello (no sugar)
2 cups vanilla yogurt (fat free, no sugar but artificially sweetened)
1/2 tsp vanilla
2 tsp Splenda
1 banana
1/8 cup Lite cream cheese
Makes 4 servings

Prepare the jello per the package directions. When it is partially set, slice and drop your banana pieces into the jello and mix gently so the banana pieces are covered by the jelly. Leave to set firm in the refrigerator.

Beat the remaining ingredients well together and set aside in the fridge.

Just before dinner put your dessert together. I use parfait glasses, they add to the fun and look of the dessert.

Drop a dollop of yogurt mixture into the bottom of each of 4 dishes and a scoop of the jello and then the yogurt mix again and so on to the top.

I have tried different flavors and different fruit, but, hubby likes the orange banana the best.

Faux Apple Crisp

3 large apples (jona golds are the best, in my opinion)
Cinammon
Sprouted wheat bread (I use Ezechial cinammon raisin from the health food store - 2 slices, they are small)
9″ square casserole dish
Makes 4 servings

Preheat oven to 375F. Spray your casserole dish with a non stick spray.

Peel, core, and slice your apples thinly into your baking dish. Sprinkle with cinammon (as much or as little as to your taste).

I take my bread from the freezer and grind it into crumbs in the blender. Now sprinkle evenly over your apples. Take a spoon and dish down here and there through the apples, so that some of the crumbs fall between the apples.

Bake uncovered in your oven 40 mins. or until your apples are cooked tender.

Cool and serve with flavored yogurt, artificially sweetened.

You can swap out the apples for blueberries, fresh or frozen. Just coat the berries first with 2 tsp flour.

It’s not been as hard an adjustment as we thought it would be and we are both eating healthier than before, that has been a bonus for us both.

I am very interested in Martial Arts, as I’ve been training in Tai Chi on and off for ten years as well as an Internal Martial Art called Wu Dao Gong for a year and a half. What I find so remarkable about this site compared to other martial art sites is the variety and depth of information shared with visitors. These people really want to paint a true, honest picture about everything that they do and why they do it. ‘Flow like a river, and be still like a mountain.’ This famous Tai Chi quote epitomizes the flowing yet static style of this website. There must be at least a hundred pages about everything from basic school principles for prospective students to recipes for healthy vegetarian food recipes! Martial Arts are a lifestyle to this school and I believe they want to address all aspects of life in a truly holistic approach.

Integrated throughout the site are heaps of photos (most of which are in vibrant color) depicting the actual training as well as cool photos of their field trips to China etc. The magazine site itself is separated into main categories such as Archived Features, Testimonials, Archived Interviews, Suggested Reading, and Vegetarian Corner for Non-vegetarians as well as Links.

For decades, jewelers have had enjoyed the position of being the “keepers” of the knowledge about diamonds and gemstones. They stood behind jewelry counters and shared little tidbits of information about jewels to shoppers. The jeweler seemed to be talking down to the shopper, making them feel as if they should be grateful to even be in the store or touch the precious gems in the display case.

This monopoly of knowledge went hand in hand with the monopoly of supply. The only way you could purchase a diamond or precious gemstone was to buy in a jewelry store. The prices were artificially high with markups of 100% to 300% of wholesale costs. The factors that differentiated stores included the ornate decorations, the fancy display cases, and elaborate storefronts. Life was simple and very profitable for the jeweler. The shopper came in, the jeweler said this is what you should buy, and the shopper paid the price because they had no other options. Can you recall any poor jewelers before the millennium change in the year 2000?

It was about this time that the most feared word in the jeweler’s vocabulary began to change the industry forever. That word was Internet. Suddenly there were competitors springing up who could supply diamonds and jewelry delivered to your door, often at prices lower than could support the high overhead of the jewelry store. However, the greatest fear was that the hidden knowledge of diamonds and precious gemstones was available to any shopper who wanted to spend a little time researching online.

The jeweler of the past said here is what I have and which one do you want to buy? Then came the knowledgeable shopper armed with printouts of online diamond advice. 7) Girdle has to be Medium (nothing more or less will do) and faceted
8) Laser inscribed with the GIA number
9) Must be able to take to an independent appraiser who agrees with all grading
10) I need it in two days

Their parting remark is that they are shopping these same requirements with twenty other retailers and are going to buy from the one with the lowest price.

This is the jeweler’s nightmare because this is not how their business works. Their jewelry store caters to the impulse buyer who will come in, see something beautiful and buy with only a few encouraging words from the sales clerk. Spending hours of work to find the specific diamond the shopper wants and then paying the shipping and insurance to get it shipped next day is just more work than they want to do for a sale. Instead, they complain and wish for the return of the good old days, when Ma Bell controlled the telephones, gas was 59 cents a gallon and the secrets of the diamond industry were safely behind the jewelry counter.

Fortunately, for diamond and gemstone shoppers there are a new breed of diamond retailers available who not only encourage diamond education; they enjoy working with shoppers who know exactly what they want. These diamond brokers have access to the diamonds on the wholesale market and know how to find diamonds that meet the shopper’s requirement. Edith's Cake That Thrilled the French

Twenty-three chefs who cooked for world royalty and heads of state (The Club des Chefs des Chefs) were, during their 1987 visit to the U.S., wined and dined with the best our finest chefs had to offer. What impressed them most? Lunch at an Amish farm in Pennsylvania, where they ate homegrown new potatoes, string beans with cream sauce and corn, charcoal-grilled chicken, and baked ham, washed down with homemade root beer and peppermint tea, served by the family in a barn lined with handmade quilts.

They were stunned. Happily so, it seems. The chef for the president of France said, “Cooking has evolved so much. Nobody presents the true product as it is, and all of a sudden we were presented that.”

But the desserts impressed them most. Especially one they couldn’t name. One they described as a light “pain d’epices” (spice cake) with a layer of chocolate filling. Gilles Brunner, chef to Prince Rainier of Monaco, was so taken with the cake, which he described as a chocolate gingerbread, that he tried to get the recipe. His request was refused.

The Amish family did not want their identity revealed, which refusal greatly hampered efforts to identify the cake as well. Research by Phyllis Richman, then food editor of the Washington Post, seemed to show that the mystery dessert was Amish applesauce cake with chocolate frosting, and the Post printed a version of it contributed by Betty Groff, a cookbook author from the Pennsylvania Dutch country.

Which applesauce cake turned out to be pretty much what our family had been enjoying since my father married Edith Kennedy in 1977, and which Edith’s family had been enjoying long before that. Her daughter, Lorenelle Doll, who gave me the recipe, says that it was a favorite of my father and Lorenelle’s husband Arnie. (So far as I know, Edith didn’t actually feed any to a French chef.)

I like to think Edith’s version is better than Betty Groff’s, because that recipe says to “frost with vanilla or chocolate frosting if desired.” Whereas Edith’s gives a recipe for chocolate frosting MADE WITH BUTTER. And in my view the humblest frosting made with butter is better than the fanciest frosting made without. I’m not implying that Edith’s frosting is humble. It isn’t. It’s purely wonderful, as is her cake.

Edith Kennedy Glidewell went to be with her Lord in March 2002, but before that she gladdened many hearts in many ways, this applesauce cake not the least of them.

EDITH’S APPLESAUCE CAKE

Cream together 1/2 cup room temperature butter or shortening and 1 cup sugar. Add 1 egg and beat together. Mix in 1-1/2 cups applesauce.

Sift together 2 cups flour, 1 tsp. baking powder, 1 tsp. soda, 1 tsp. salt, 1 tsp. cinnamon, 1/2 tsp. allspice, 1/2 tsp. nutmeg, and 1/4 tsp. cloves. Add to applesauce mixture, along with 1 cup raisins and 3/4 cup chopped walnuts.

Lightly oil a 9″ x 12″ pan and dust with flour. Add the cake mixture and bake at 350 degrees 50 to 60 minutes, until the top of the cake’s center springs back when touched. Frost with chocolate frosting when cool.

Chocolate Frosting: Combine in a heavy saucepan or double boiler 1 square baker’s unsweetened chocolate, 1 cup sugar, 1/4 cup butter, and 1/3 cup milk. Bring to a boil, stirring constantly, and cook 1 minute. Cool and beat until the frosting has a satin finish.

Bruce Lee, the Greatest Martial Arts Action Hero

Before Jackie Chan, Jet Li, Steven Seagal and Jean-Claude Van Damme, there was Bruce Lee. In a way, it is a real shame that many of today’s generation of action film fans have never been exposed to Bruce Lee because he was perhaps the greatest martial arts action hero of all time. His martial arts on film may not have been as fancy as say Jackie Chan’s or Jet Li’s but his on screen ferocity and charisma are unequalled. Even more important was the impact on martial arts that Bruce Lee had which still endures today even over 30 years since his passing.

Bruce Lee always considered himself a martial artist first and an actor second. As a martial artist, he was way ahead of his time in developing his own style of martial arts he called jeet kune do. His martial arts incorporated the most practical techniques from various combative disciplines as he moved away from the traditional and classical techniques. His martial arts abilities were real and
respected by other prominent martial artists like Jhoon Rhee, Chuck Norris, Ed Parker and Joe Lewis. His name was inducted into the prestigious Black Belt Hall of Fame twice, once while he was alive and the other after his death. These are honors that no other martial arts action hero has ever come close to. Martial arts schools in North America enjoyed a huge growth in enrollment because of Bruce Lee.

North America got an early glimpse of Bruce Lee when he played Kato in the Green Hornet television series and a bit role in the movie Marlowe. He went to Hong Kong and made a few films like Fists of Fury (called the Big Boss in the Asia market) and the Chinese Connection which made him a huge star in Asia. Bruce Lee also wrote, directed and starred in his own movie production called the Way of the Dragon which featured perhaps one of the greatest martial arts fight scenes ever. This scene took place in the Roman Coliseum and was with Chuck Norris which gave Norris his first film start. It was Enter the Dragon that broke him to North America. Unfortunately, he died tragically at the age of 32 in 1973 before he was able to witness the success of that movie. At the time of Lee’s death, he had completed the fight scenes for another movie called Game of Death which featured basketball star Kareem Abdul-Jabar, who was actually one of his martial arts students. Other students of Bruce Lee included actors Steve McQueen and James Coburn. Game of Death was completed with look-alike actors later on.

One of the most significant contributions Bruce Lee made is that he opened the door for other Asians in the entertainment industry worldwide. He was the first Asian to achieve any significant success in the North American entertainment scene. He became a star in North America and the rest of the world by playing heroes rather than past stereotype roles for Asians such as like servants, gangsters, laundry workers or other ‘pigtail coolie’ characters. On an even greater scale, Bruce Lee gave Asians, particularly the Chinese people worldwide, a reason to be proud. Bruce Lee influenced them to be confident in pushing forward to achieve their goals no matter what field they were in.

Easy poached chicken salad

Ingredients:

4 chicken breasts (skinless)

1 finely sliced red onion

1 whole half onion

4 good ripe tomatoes sliced thickly

250 grams/4ozs salad leaves mixed

4ozs raisins soaked in hot water for ten minutes

1 half lemon

2 fresh or dry bay leaves

1-teaspoon peppercorns black

1 small French, stick loaf or similar sliced into 1/2 slices

For the dressing:

1/4 cup olive oil

1clove garlic crushed

1/2 dessert spoon Dijon or other mild mustard
